PRICING: Cutting and packaging (vacuum sealed) beef is $1.00/lb hanging weight plus slaughter and rendering fee.
Note: The thicker the steaks you choose, the less quantity or number of steaks you wlll receive. You will be able to choose different thicknesses for rib, loin, and sirloin later in the form if you would like.

The chuck roast makes an excellent beef stew, pot roast, or French dip sandwiches. Best slow cooked or in a pressure cooker with moisture. Steaks from the chuck can include the flat iron steak and a chuck-eye Delmonico (or poor man's ribeye)
Our personal favorite steaks and roasts! Delicious and tender, great for grilling, broiling, or roasting in the oven for a special occasion. Please note that a 4lb roast most likely will not leave room for steaks. A smaller roast should leave room for approx 2-4 steaks, depending on thickness.
Top round is the most tender part of the round. Good for oven or rotisserie roasting, cooked rare and thinly sliced to increase tenderness.
Eye Round is in between top and bottom round on the tenderness scale. Good as a roast cooked to medium rare and sliced.
Bottom round is good for braising, cooked in the slow cooker, or used for jerky. It is tougher than the rest of the round.
Best marinated and cooked to rare or medium rare on the grill (steaks) or rotisserie (roast).

Flank steak is good on the grill, marinated or not. Very flavorful and tender as long as it is sliced thin and across the grain. Short ribs and brisket are best cooked low and slow. Brisket is amazing cooked on a smoker or brined for corned beef.

NOTE: GROUND BEEF IS PACKAGED IN 1 POUND TUBES AND ALL OTHER CUTS ARE VACUUM SEALED. The thicker the steaks you choose, the less quantity or number of steaks you will receive. We will try to accommodate special requests for cuts or sizes when possible if circumstances allow. Please list them in the text box above for consideration. The options above for steaks and roasts from the round and loin are not guaranteed for split side, as the entire primal must be cut the same way. You will receive cuts from the loin and round, but may not have a choice which type of cut. Ground beef is made from the trimmings and any cuts you don't choose.
