Alliance Farm Butchery Beef Cut Options
A price list must be received no later than 3 days before the animal is dropped off to allow time to enter your information into our scale. The scale requires prices in order to print labels.

**SELECT ONE CUT PACKAGE**

Cut packages A-D are included in the standard slaughter, cut, and wrap pricing. ($240/quarter beef)
Package includes approximately 40% ground beef, rib steaks, tenderloin steaks, NY Strip steaks, sirloin steaks, sirloin tip steaks, stew meat, brisket, bottom round roast, chuck/arm roasts and steaks, and short ribs. May also include: flank steak, skirt steak, hanger steak, eye of round, oxtail.
Package includes approximately 30% ground beef, rib steaks, tenderloin steaks, NY Strip steaks, sirloin steaks, sirloin tip roast, stew meat, brisket, bottom round roast, chuck/arm roasts, and short ribs. May also include: flank steak, skirt steak, hanger steak, eye of round, oxtail.
Package includes approximately 70% ground beef, rib steaks, tenderloin steaks, NY Strip steaks, sirloin steaks, sirloin tip steaks, London broil, and bottom round roast. May also include: flank steak, skirt steak, hanger steak, eye of round, oxtail.
Package includes 100% ground beef, with no additional cuts.

Additional options are not guaranteed, but we will try our best to accommodate your requests. If organs are desired, your cut sheet must be submitted at least one day before the animal is dropped off by the farmer.

**Beef Add-on Packages**

Add-on packages are optional and additional costs apply.
Specialty beef sausage of your choice, in bulk 1 lb packages, made with a portion of your ground beef. Approximately 15 pounds. $30/QUARTER COW. Links and patty options available for additional fee - see below.
Have your sausage linked or made into patties. Approximately 15 pounds. $1/lb plus $30/quarter sausage fee listed above.
Beef bacon, cured and smoked. $20/QUARTER COW.
A portion of your plain ground beef made into patties. $1/LB.
